For batch making, increase measurements by 10 and include 350ml of still water rather than stirring over ice. Mix all ingredients, bottle and chill. Serve over ice when needed. Will keep chilled for up to three months.
In saucepan toast 10 crushed cardamom pods, 2 cinnamon sticks, 10 cloves, 2 star anise and the peel of one orange. Add 250g Demerara Sugar and 250ml water. Heat and stir until dissolved. Let cool before straining into a bottle or adding to your cocktail.
