50ml Echlinville Irish Pot Still Gin

25ml fresh lemon juice

20ml sugar syrup

5 fresh raspberries

1 egg white

Ice for shaking

Shop Echlinville Gin

Add Echlinville Gin, lemon juice, sugar syrup, egg white and most of your raspberries to a cocktail shaker.
Dry shake without ice.
Add a few ice cubes and shake again.
Strain in to a coupe or martini glass.
Garish with a skewered raspberry and fresh mint sprig.
