Our Whiskey

The Aird Cask Collective offers you the opportunity to purchase your very own cask of Echlinville Single Estate Irish Whiskey.

Choose from three distinctive and unique new make spirits – Echlinville Single Malt, Old Comber Pot Still or Old Comber Heritage Mash Bill. Every drop will be distilled in our state-of-the-art stillhouse, from barley grown, harvested and malted on our distillery farm.

Each step of the production process – from mashing and fermenting the grains, to casking and maturing the spirit, to filling and labelling the bottles – is completed at our distillery.

The result is whiskey that is as unique in provenance as it is in flavour and character.

The field-to-glass journey of our whiskey makes Echlinville unique among Irish distilleries. Through the Aird Cask Collective, we are delighted to invite you to write your own chapter in our Single Estate story.

What is Aird?

Our Place

The word ‘Aird’ comes from the ancient celtic name for the Ards Peninsula – home of The Echlinville Distillery, Ireland’s first single estate whiskey distillery and the first newly licensed distillery in Northern Ireland for more than 125 years.

Throughout the ages, The Ards Peninsula has been renowned as one the finest barley growing regions in Ireland. It is no coincidence that the area has a proud whiskey heritage, grounded in its rich soil, temperate climate and high yield crops.

From the famous Old Comber Whiskey to the Ards Maltings Company, Aird is steeped in distilling history.

Those pillars of our whiskey heritage are now together under the guardianship of The Echlinville Distillery, Ireland’s first field-to-glass distillery, where whiskey making is grounded in character, provenance, community, tradition, time and above all, authenticity.

Our Single Malt and Pot Still whiskeys have provenance, character and flavour that can be found nowhere else. This is a unique place with unique people and unique spirit, and that is at the very heart of our ethos.

Excellence Instilled

Our Process

Curating an exceptional whiskey takes time. It’s not just about the time the spirit spends in wood, but also the time taken to distil.

We slow down the stills, maximising the spirit’s contact with the copper and achieving a spirit as complex as it is delicate.

Your spirit will be casked at 63.5% abv to be aged in a superior quality ex-Bourbon cask. It will be matured in our warehouse for a minimum of eight years, nurtured by the temperate climate and saline air of Aird, the Ards Peninsula.

Upon maturation, we can also complete the bottling and labelling of your whiskey on site at our distillery – the final stage in the field-to-glass process. We can even facilitate the design of your bespoke label.

The final product will be your very own unique and personalised bottling of exceptional Irish Whiskey from Ireland’s first single estate farm distillery.
