Dunville’s Irish Whiskey is collaborating with Derry city venue Stitch & Weave for the latest release from its Exclusive Single Cask Series.
Cask 1782 is a 13 Year Old Irish Single Malt finished in Pedro Ximenez Sherry Casks. It has been bottled exclusively for Stitch & Weave bar and restaurant on Derry’s Ebrington Square.
The Single Cask release of 298 bottles at a cask strength of 58.3% ABV will be available exclusively from Stitch & Weave, in the bar and online, priced at £135.
Exclusive Single Cask
Dunville’s Exclusive Single Cask Series features bespoke bottlings for key hospitality and retail venues within the Irish Whiskey industry. It showcases the best whiskeys from the Dunville’s Whiskey warehouses, with each bottled at its optimum strength for the best possible quality and flavour.
Cask 1782 has been carefully selected by David and Sean McElhone from Stitch & Weave alongside Dunville’s Irish Whiskey’s Séamus Óg Birt and Head Blender Niall Bolger.

Tasting Notes
Nose – Toffee Apples, freshly baked apple and berry tart, plum compote, almond brittle and warming autumnal spices.
Palate – Thick and syrupy, cacao nibs, stewed orchard fruits and vanilla custard develop into warm apple tatin, spiced with cinnamon and clove, and a rich caramel glaze
Finish – Long, lingering and warming, dried dates, chocolate figs, red apple skins and café mocha give way to sweet rolling tobacco, vintage leather and cedarwood tones, over crystallised ginger, white pepper and seasonal nutmeg.
